For Last years Christmas Special and what I am to understand is the final Countrywise episode for a while.
I take Liz Bonin through Delamere Forest to discover the abundant wild edibles to be found through the winter months.
We return to our forest kitchen to cook up a wild food inspired Christmas dinner. Including; Chicken of the woods mushroom, Wild Herb roasted potatoes, Elder Berry boozy red cabbage and Sweet Chestnut Stuffing. To finish off we had wild Mince Pies (although this isn’t shown in the video) – which contained; hogweed seeds, rose hips, hawthorn berries, herb bennet roots, figs and sweet chestnut flour.
