Japanese Knotweed is used as the base of this Jam – don’t worry – it’s not going to wreck your house if you spill some.
We professionally pick this plant from spaces where it’s growing in abundance in the wild with methods checked by the Environment Agency.
We then take it back to our totally wild kitchen where, with the addition of a little ginger, we turn it in to the most amazing jam. It tastes most similar to a rhubarb and ginger jam and goes perfectly on toast and scones. If you’re feeling a little more adventurous it also goes really nice on top of baked salmon – we actually bake our salmon with the jam on it before wrapping it in tin foil.
